HOW PERSEVERANZA MAKES WINE

The history of wine-making stretches over millennia. The science of wine and winemaking is known as oenology.
Winemaking or vinification is the production of wine, starting with the selection of the fruit, its fermentation into alcohol, and the bottling of the finished liquid.
There are five basic stages or steps to making wine: harvesting, crushing and pressing, fermentation, clarification, and then aging and bottling. Undoubtedly, one can find endless deviations and variations along the way.
  • Vineyard Management

     

    Growing and pruning grapes: The vineyard is the heart of any winemaking operation, and in Marche, Italy, great care is taken to ensure the grapes are of the highest quality. This includes selecting the right grape varieties, properly training and pruning the vines, and controlling pests and diseases

  • Harvesting

    Harvesting at the right time: The grapes are harvested at the peak of ripeness, typically in August and September.

    The grapes are hand-picked to ensure only the best quality fruit is used for winemaking.

    Turning grapes into wine: Once the grapes have been harvested, they are brought to the winery for vinification. This process includes crushing the grapes,

    fermentation, and aging the wine.

  • Ripening

    Aging to perfection: The wine is then aged in tanks or barrels to develop its unique flavours and aromas. The length of time the wine is aged varies depending on the type of wine being made.

    Putting the final touches on the wine: Once the wine has reached its desired maturity, it is bottled and prepared for distribution.
